504 Healthy Bread Flour

For a healthy and nutrient-dense sourdough bread, use a base of strong unbleached white bread flour blended with high-fiber whole grain or ancient grain flours.

Recommended Flour Types

• Strong Unbleached Bread Flour (Base – 70% to 80%):
• Protein content: 12% to 14%
• Why use it: It provides the necessary gluten strength and gas retention for a good rise and an airy crumb. Always choose unbleached varieties to preserve natural wild yeasts.

• Whole Wheat Flour (20% to 30% blend):
• Why use it: It retains the bran, germ, and endosperm, offering much higher fiber, vitamins, and minerals than white flour. It adds a nutty flavor and deepens nutrition, though it absorbs more water and can make the crumb denser.

• Rye Flour (5% to 15% blend):
• Why use it: Rich in minerals and natural amylases, rye supercharges fermentation and adds a distinct tangy depth. Because it has a weak gluten structure, keep the percentage low or bake in a loaf pan.

• Ancient Grains (Spelt, Einkorn, or Kamut – 10% to 20% blend):
• Why use it: These unhybridized grains are often easier to digest for people with mild wheat sensitivities. They impart rich, complex flavors, though they require careful hydration adjustments because their gluten is more delicate.
